What’s a Masala?

In the world of Indian cooking,"masala" refers to a blend of ground spices used to flavour dishes. They play a central role in the kitchen and are often used in curries and marinades, to add depth, complexity, and distinctive flavours to the finished dish.

I recall with fondness as a little girl, the sight of fresh ingredients and spices being combined, ‘bashed’, and rolled by grinding stones — a ritual that transformed them into thick, luscious, aromatic pastes.
